Bursa, Kayhan Çarşısı - “Bir Ocakta Yanan Ateş, Yüzyıllık Bir Mirası Aydınlattı”
İskender Kebabı’nın hikâyesi, 1867 yılında Mehmet oğlu İskender Efendi’nin Kayhan Çarşısı’ndaki küçük dükkânında başladı. O dönemde kuzu eti yatay olarak pişirilirken, İskender Efendi bu düzeni değiştirmeye karar verdi.
Eti kemik ve sinirlerinden arındırdı.
Dikey bir şişe takarak odun kömürü ateşinde pişirdi.
İnce ince dilimleyerek tereyağlı pidenin üzerinde sundu.
Bursa sokaklarında yeni bir lezzet yankılanıyordu. İlk başta “dönen kebap” olarak anılan bu eşsiz lezzet, zamanla İskender Kebabı olarak hafızalara kazındı.
