İskender Kebabı’nın hikâyesi, 1867 yılında Mehmet oğlu İskender Efendi’nin Kayhan Çarşısı’ndaki küçük dükkânında başladı. O dönemde kuzu eti yatay olarak pişirilirken, İskender Efendi bu düzeni değiştirmeye karar verdi.
Eti kemik ve sinirlerinden arındırdı.
Dikey bir şişe takarak odun kömürü ateşinde pişirdi.
İnce ince dilimleyerek tereyağlı pidenin üzerinde sundu.
Bursa sokaklarında yeni bir lezzet yankılanıyordu. İlk başta “dönen kebap” olarak anılan bu eşsiz lezzet, zamanla İskender Kebabı olarak hafızalara kazındı.

In the early years of the Republic, the shop in Kayhan Bazaar had become more than just a restaurant; it was now a symbol of mastery. The sign, changed in 1928 with the Alphabet Reform, indicated that history continued to be written within these walls.
